Ingredients:

  • 2.5 cups rice
  • 1/2 cup drained lentils – parboiled with turmeric powder with salt to taste
  • 4 fried potatoes
  • 1.5 gr chicken
  • 1 large onion
  • 3 cinnamon sticks
  • 3 bay leaves
  • 3 star anise
  • 3 cloves
  • 3 elaichi/ cardamom
  • 2 grated tomatoes
  • 2 stem curry leaves
  • 2 tsp ginger and garlic paste
  • 1 tsp dry thyme
  • 1 tsp jeera/cumin powder
  • 1 tsp dhania/coriander powder
  • 1 tsp soomph/fennel powder
  • 1 tsp turmeric powder
  • 3 heaped tbsp masala
  • Salt to taste

Instructions:

In a pot add oil and fry onions with whole spices till golden brown. Add tomatoes and the rest of the spices. Braise for a minute then add the chicken salt to taste and cook 10 minutes. Add a handful of chopped dhania. Add the rice and stir cook on medium to low heat for another 20 minutes adding very little water while cooking. Add the fried potatoes.
